This great recipe is low in calories or kilojoules yet high in favor. Imagine sitting down to a delicious pork chop meal that has been marinated in lemon and oregano, grilled to perfection, with a serving of home made Greek salad. How good is that?

Lemon Pork Chops recipe is easy to prepare, easy to cook and easy on your wallet. Using low fat feta cheese in the salad and olive oil for cooking, this keeps the overall calories low. If you are watching your weight or on a weight loss program, this lemon pork chop is just 300 calories, which is 1260 kilojoules.

 

Lemon Pork Chops Recipe

Follow the directions below and you can't go wrong. This recipe does need you to make a marinade so allow time to prepare the marinade and then soak the pork chops prior to cooking. 30 minutes in the marinade is enough to get the lovely taste right through the pork meat. Of course it will taste even better with a longer time in the marinade.

Ingredients:

  • I lemon
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 4 loin pork chops
  • 2 tomatoes
  • 1 Lebanese cucumber
  • 1/2 onion
  • 100g low fat feta cheese
  • 1/2 cup black olives
  • 2 cups rocket leaves
  • 1 medium avocado

Preparation:

Marinade

  • Juice the lemon into a bowl
  • Finely grate the lemon peel and add to bowl
  • Add olive oil and oregano
  • Mix together and add pork chops
  • Leave pork chops in bowl for at least 30 minutes, turning once or twice

Hint: Before adding pork chops to the marinade, take a few spoonfuls off and save as a salad dressing

Greek Salad:

  • Dice tomatoes
  • Dice cucumber
  • Thinly slice onion
  • Dice feta
  • Slice avocado
  • Add rocket leaves and olives
  • Toss all salad ingredients together

Optional - Sprinkle an extra tsp of olive oil over the salad if you want a light dressing or use that saved from the marinade

Hint: Substitute rocket leaves for your favorite lettuce or add a real touch of the Mediterranean by using flat parsley leaves.

Cooking:

Either grill, bbq or pan fry the pork chops remembering that pork must always be thoroughly cooked for health reasons. The olive oil in the marinade will be sufficient cooking oil.

Serve the finished pork chops with the Greek Salad. This is as good as going to a restaurant for dinner. Delicious!
