  • One Medium Chicken Breast Fillet

  • 1 Medium avocado

  • 1/2 Onion

  • 2 Cups Lettuce

  • I/2 Lebanese Cucumber

  • 2 Tomatoes

  • 10 black olives

  • 250g Fetta Cheese

  • Juice 1 Lemon

  • 2 Tbls Olive Oil (Extra Virgin)


  • Steam or dry roast chicken until tender
  • Cut chicken into thin strips and arrange on serving plate
  • Peel avocado and slice fruit in thin strips
  • Dice cucumber, tomato and fetta cheese
  • Thinly shave lettuce and onion
  • Add all prepared ingredients to a large mixing bowl
  • Add olives
  • Blend lemon juice and olive oil together to make a low calorie salad dressing and sprinkle over ingredients
  • Mix all salad ingredients together to allow the dressing to permeate through
  • Serves 2

Please note that Avocado do contain fat and are relatively high in calories. 1 medium avocado contains 255 calories and 30g of fat. The fat is monounsaturated fat, believed to be good to lower bad cholesterol. Avocado are high in antioxidants and folate. Avocado contain 60 percent more potassium per ounce than bananas. Avocado do not contain any cholesterol.
