It is interesting to note the difference in how many calories in pork chops between untrimmed cuts with fat on, compared to lean pork trimmed of fat. You can cut calories almost by half if you trim pork of all the fat.
For example a loin pork chop with fat is 390 cals compared to loin chop trimmed of fat 210 cals. That's a substantial saving of calories in pork chops if you are watching your weight.
Some countries now have a pork product called "New Fashioned Pork" or "New Age Pork". This is pork that is grown leaner on the farm and is similar in calories to lean pork.
